Course Description
The course focuses on the various types of food processing technologies from both the industrial and public health point of view. It covers methods of using low temperatures in food preservation; using high temperatures; food canning & sterilization; control of food by reducing acidity (food fermentation); control of food by reducing moisture (food drying) ; food irradiation, various types of food packaging. The course includes field visits to food processing establishments followed by reporting and group discussion.
