NUTR 332: Food Additives (2Cr:2Lec,0Lab,0Tut):
The course describes food additives, which are any substance not normally consumed as a food by itself and not normally used as a typical ingredient of the food, whether or not it has nutritive value, the intentional addition of which to food for a technological purpose in the manufacturing, processing, preparation, treatment and packing. This course will increase students’ awareness about the different categories of food additives, their usage and their influence on the nutritional value of the food, as well as the labelling requirements for food additives and the international legislation that governs food additives, as well as their adverse health effects on humans.
